BROCCOLI SOUFFLE WITH PEAS AND GORGONZOLA

You want to prepare a delicious dinner or an exceptional garnish with which to impress your family and guests? Try this simple recipe of broccoli souffle with peas and gorgonzola. Surely you will not fail!

BROCCOLI SOUFFLE WITH PEAS AND GORGONZOLA

INGREDIENTS

– 17 oz broccoli
– 1 cup peas
– 7 oz gorgonzola
– 3.5 oz parmesan
– 5 eggs
– 3.4 fl oz milk
– 2 tablespoons sour cream
– 1/8 teaspoon nutmeg
– salt
– pepper

DIRECTIONS

Cut the broccoli in florets and boil it for 5 minutes, along with peas. Then take them in a strainer and let them drain for 5 minutes. When they have cooled chop them finely and season with salt and pepper to taste.

Cut the gorgonzola into small cubes and grate the parmesan, then add them over the broccoli.

Separate yolks from whites.

Pour the cream and milk over the yolks and mix well. Season with salt and pepper to taste then add nutmeg. Blend this mixture with the broccoli.

In a mixer bowl beat the egg whites with salt until you get a hard foam. Add them over the preparation and mix carefully.

Add the souffle in a baking dish greased with butter and bake in hot oven for 40 minutes.

The broccoli souffle with peas and gorgonzola can be served with a spoonful of sour cream or with a steak.
