At the beginning of summer begin to ripen the tasty apricots. Take advantage of this time to prepare the most delicious sweets that will delight your taste buds. For today we prepared a simple and quick recipe for muffins with apricot filling.
INGREDIENTS
– 10 oz fresh apricots
– 5 oz butter
– 15 oz flour
– 2 eggs
– 1 sachet baking powder with saffron
– a pinch of salt
– 7 oz brown sugar
– 10 fl oz milk
– zest from one orange
– vanilla essence
– cinnamon
– nutmeg
– 1 teaspoon orange juice
DIRECTIONS
Wash well the apricots and remove their pits. Cut the apricots in half or quarters depending on the size of the forms for muffins, and fruits.
Preheat oven to 350 ° F and line a muffin tray with special paper.
In a saucepan add the butter and sugar and heat them over low heat until are melted. Mix continuously during this period. Then let them cool to room temperature.
In a mixer bowl add eggs and a pinch of salt and beat them well until they become frothy. Add the sugar and butter composition continuing to mix. Add the flour and baking powder. Then incorporate the milk and add vanilla to taste, cinnamon and nutmeg. Then incorporates the orange peel and a teaspoon of orange juice.
Pour the dough obtained in forms for muffins, filling 3/4 of the form. Add to each form a quarter or half apricot.
Bake the muffins for 25 minutes on medium heat.
Serve the muffins with apricot filling cold. For a more pleasant aspect you can decorate them with whipped cream or powdered sugar.
