Spicy chicken with cauliflower, mint and pistachio garnish is perfect for both a romantic dinner for two or for a meal with family and / or friends. It is easy to prepare and you will fall in love with the mix of flavors.
INGREDIENTS
– 1/4 cup rice vinegar
– 1/4 cup freshly squeezed orange juice
– 2 tablespoons of spicy tomato sauce
– 2 garlic cloves, crushed
– 2 tablespoons soy sauce
– 2 tablespoons honey
– 1 teaspoon red pepper flakes (spicy or sweet, your preference)
– 5 tablespoons extra virgin olive oil
– 4 whole chicken legs
– 1 cauliflower, cut in florets
– 25 cherry tomatoes, peeled and chopped
– 1/4 cup chopped mint
– 1/4 cup finely chopped pistachios
– 1 tablespoon lemon zest
– salt
– pepper
DIRECTIONS
In a capacious bowl add the rice vinegar, lemon juice, tomato sauce, garlic, soy sauce, honey, pepper flakes and two tablespoons of olive oil. Mix well and add the chicken legs. Cover the bowl and let the meat marinate at least 15 minutes.
Add cauliflower in food processor and mix until it looks like couscous.
In a roomy pan add two tablespoons of olive oil and add the cauliflower. Cook the cauliflower until is tender. Season with salt and pepper to taste and pour it into a roomy bowl. Let it cool.
Preheat oven to 390 degrees F. Heat up a grill pan. Remove chicken from marinade, season it with salt and pepper and grill on both sides until it is lightly browned. Then add it to the oven and bake it until it is well penetrated.
Over the cold cauliflower add the mint, pistachio, lemon, cherry tomatoes and a tablespoon of oil, mix well and season with salt and pepper to taste.
Put the chicken on a plate and add the salad with cauliflower. Serve with lemon slices and a glass of white wine.
