The salad with orzo pasta, asparagus and tomatoes is ideal for a quick meal. This salad is prepared in a few minutes and it is very aromatic.
INGREDIENTS
– 10 oz orzo
– 1 bunch asparagus, cut 1 inch thick
– 14 oz cherry tomatoes, cut in half
– 1 lemon (both car and lemon zest)
– 1 clove garlic, crushed well
– kosher salt
– freshly grated pepper
– grated Parmesan cheese
DIRECTIONS
Boil two pots with water. Add one teaspoon of salt in each pot. In one of the pots boil the orzo pasta, and in the other one add the asparagus. Then prepare a bowl with cold water and ice. When asparagus is well done, put it directly in the bowl with ice. In this way it will maintain its color.
When the pasta is cooked add it on a platter. Add asparagus and tomatoes on top.
In a capacious bowl mix the olive oil, lemon zest, lemon juice, garlic, salt and pepper. Add the mixture over the salad and mix well. You can add Parmesan cheese to taste.
