Whiskey and dark chocolate cake, a treat in the cold season

Do you want to spoil your senses with a lot of chocolate cake? Here is a simple and delicious recipe, perfect for a weekend spent in the family. Absolutely the loved ones will be pleasantly surprised when you will serve this cake.

Whiskey and dark chocolate cake

Ingredients:
For the dough

– 200g dark chocolate, chopped
– 125g unsalted butter
– 5 eggs
– 120g brown sugar
– 1 ampoule vanilla essece
– 125g almond flour
– 1 tablespoon whiskey
– a pinch of salt

For the cream

– 200g white sugar
– 100g butter
– 380 ml cooking cream
– 200g dark baking chocolate, chopped small
– 350ml whiskey
– a pinch of salt

Directions:

Preheat oven to 180 ° C. Cover a 9 inch length tray with baking paper and then grease it with butter.

Carefully separate the egg whites from the yolk.

Melt the chocolate in a bain-marine with the unsalted butter, stirring constantly. When ready, leave aside to cool until it reaches room temperature.

In a bowl mix the yolks with the brown sugar for three minutes, or until you get a smooth and creamy composition. Add vanilla and gradually pour the chocolate mixture prepared previously. Then incorporate the almond flour and add a tablespoon of whiskey.

In another bowl, whisk egg whites with a pinch of salt until you get a hard foam. Then incorporate the egg whites in the composition previously prepared, using circular movements so the dough remains fluffy.

Put the mixture into the cake pan and bake for 45-55 minutes. When ready let it cool.

Meanwhile prepare the cream. In a pot for preparing sauces put white sugar and let it melt. When it becomes golden, take the pot off the heat and let the sugar cool a little. Add butter, cream, whiskey and a pinch of salt. Cook it on low heat for 5-10 minutes. Add the baking chocolate and continuously stir until it melts. Let the cream cool.

Cut the dough in half and pour half of the cream. Add the other half and cover the cake with the remaining cream.

How to serve the whiskey and dark chocolate cake

Garnish the cake with almond flakes or chocolate chips. You can serve alone or with a cup of vanilla ice cream.
