Vegetarian lasagna with four types of cheese

Vegetarian lasagna with 4 types of cheese is a delicious dish for which you need feta cheese, ricotta, mozzarella and parmesan.

Vegetarian lasagna

Ingredients:

– 2 cups peeled and chopped pumpkin
– 1 eggplant
– 5 tomatoes
– 16 oz ricotta
– 8 oz feta cheese
– 2/3 cup pesto sauce
– 2 eggs
– salt and pepper
– 14 oz of tomato sauce
– fresh lasagna sheets
– 1 1/3 cup grated mozzarella
– 1 cup grated parmesan cheese

Directions:

Brown the pumpkin in preheated oven at 350 degrees F for 30 minutes. After 15 minutes add the tomatoes near the pumpkin to bake together. Slice the eggplant into slices and cook it on a grill, for about 10-15 minutes.

Mix ricotta, feta cheese, pesto and eggs in a medium bowl and flavor them with salt and pepper to taste. Incorporate the pumpkin into composition.

Put half of the tomato sauce in a pan and then smear 2 sheets of pasta over it. Add a layer of eggplant, then one layer of composition with cheese, about half of the total. Cover with 2 sheets of lasagna and put baked tomatoes on top and the rest of the ricotta mix. Sprinkle some amount of mozzarella and add 2 sheets of lasagna. Pour the rest of baked tomatoes over it with the remaining mozzarella. Put another sheet of pasta and cover it with tomato sauce. Sprinkle parmesan over.

You can serve this delicious dish with a glass of wine. If you prefer white varieties, opt for Chardonnay or Pinot Gris. If you prefer a red wine, you will not go wrong with a Pinot Noir.
