INGREDIENTS
– 12 oz flour
– 10 oz sugar
– 1 sachet baking powder
– a pinch of salt
– 1 teaspoon cocoa powder
– 12 fl oz oil
– 8.5 oz buttermilk, at room temperature
– 2 large eggs at room temperature
– zest of one lemon
– 1 teaspoon white wine vinegar
– 1 vial of vanilla essence
– red food coloring
For the glaze:
– 8.8 oz unsalted butter at room temperature
– 16 oz cream cheese at room temperature
– 1 vial of vanilla essece
– 17 oz powdered sugar
DIRECTIONS
Preheat oven to 350 ° F. In a muffin pan add special papers. If you have silicone molds, smear them with butter or oil.
In a capacious bowl add flour, sugar, baking powder, salt and cocoa. Mix them well.
Separately, in a mixer bowl beat the eggs well and then add the buttermilk and vinegar. Add a little food coloring to obtain a dark red composition. Then incorporate the vanilla and lemon peel.
Using a spoon incorporate the dry ingredients in the composition obtained. Add the dough obtained in the muffin forms. Fill them only 2/3, because they swell.
Bake the muffins at medium heat for 20-22 minutes.
Meanwhile, prepare the glaze. Add the butter in a roomy bowl and mix it very well. Gradually incorporate the cream cheese and then the vanilla. Mix everything at full speed until you get a frothy cream. Add the sugar and continue to mix.
Let the muffins cool completely before adding the glaze over them. You can decorate with chopped cranberries, candied cherries or red decorative candies.
Serve the Red Velvet muffins with a glass of champagne.
