Quesadilla with cheese and mushrooms prepares in a few minutes. It can be served hot or cold. It is perfect for your child’s lunch bags for school or for a snack. Serve it when you have guests and certainly you will amaze them with this recipe.
INGREDIENTS
– 1 tablespoon olive oil
– 2 tomatoes, chopped
– 10 oz mushrooms, sliced
– 2 cloves of garlic, crushed
– salt
– pepper
– 4-8 tortillas
– 8 oz Emmental or Cheddar cheese, grated
– 4 pieces of green onion
DIRECTIONS
Heat oil in a pan and add the garlic and mushrooms. Season with salt and pepper. Cook them for 3-4 minutes, stirring constantly, or until the mushroom sauce evaporates. Add the tomatoes and cook them in for another 2-3 minutes. Take the mushrooms and tomatoes on a plate and let them cool.
Wipe the pan with a paper towel.
On a half of tortilla add a part of the mushroom mixture and sprinkle above cheese and green onions. Fold the tortilla and repeat the process with the remaining tortillas.
Put in a hot pan a tablespoon of olive oil. Cook each tortilla for 1-2 minutes on both sides. Put them on a plate and then cut them in half.
Serve the quesadilla with cheese and mushroom with a glass of white wine.
