PISTACHIO MUFFINS, A QUICK DELICIOUS RECIPE

You have guests and want to impress them with a simple but delicious dessert? Or you simply want to treat yourself with a delicious muffin while you drink your tea / coffee? We recommend the pistachio muffins. They are delicious and easy to prepare.

PISTACHIO MUFFINS

INGREDIENTS

For muffins

– 6 oz unsalted butter
– 2.6 oz whole wheat
– 5 oz pistachios
– 1 sachet baking powder
– 6 oz brown sugar
– 2 large eggs
– 1 vial vanilla essence
– 2 tablespoons milk
– a pinch of salt
– zest of one lemon

For glaze

– 10 oz mascarpone
– 1.7 oz butter
– 3.5 oz powdered sugar

DIRECTIONS

Preheat oven to 350 degrees F. Grease a muffin pan with butter and coat it with flour.

Add pistachios in food processor and mix well until chopped. Add the remaining ingredients over pistachios and continue to mix until you obtain a homogeneous composition.

Using a spoon fill the muffin forms, leaving enough room for each to grow. Bake them for 15 minutes or until the toothpick comes out clean from them.

Remove the pan from the oven and let the muffins to cool in pan for 10 minutes, then put them on a platter.

Meanwhile, prepare the glaze. In a mixer bowl add the butter and a pinch of salt and mix until becomes foam, then add three tablespoons of mascarpone and continue to mix. When you have obtained a homogeneous cream incorporate the remaining mascarpone then gradually add the sugar. If you want a flavorful glaze you can add vanilla essence and lemon peel.

Let the cream in the refrigerator for 30 minutes or until muffins have cooled completely. Decorate the muffins with the glaze obtained.
