Muffins with carrots and apples are easy to prepare and will be appreciated both by children and adults. They go perfectly with a cup of coffee or a glass of milk and are the perfect dessert for any occasion.
INGREDIENTS
– 9 oz flour
– 5 oz brown sugar
– 1 sachet baking powder
– 1 teaspoon baking soda
– 1 and 1/2 teaspoon cinnamon
– 1/4 teaspoon nutmeg
– 1/4 teaspoon salt
– 8 oz sunflower oil
– 4 large eggs, well beaten
– 3 carrots medium size
– 2 medium-sized apples
– 4.4 oz pecans (or normal nuts)
– 0.5 oz coconut flakes
For the glaze:
– 8 oz cream cheese, at room temperature
– 4 tablespoons unsalted butter
– 1 teaspoon vanilla extract
– 9 oz powdered sugar
DIRECTIONS
Preheat oven to 350 degrees F and line a muffin tray with special papers.
In a large bowl mix the flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg and salt. Mix well, then incorporate the beaten eggs, carrots, apples, nuts and coconut flakes. Mix well until smooth.
Add the mixture into forms filling just 3/4 of them, to have room to grow.
Bake the muffins for 20-25 minutes. Let them cool completely before adding the glaze.
When the muffins have cooled, prepare the glaze. In a capacious bowl add cream cheese, vanilla and butter. Mix until you get a foam. Gradually incorporate the sugar into composition.
Apply the glaze over the muffins with special utensil.
