You’re craving for something sweet? Try lemon cookies. They are simple and quick to prepare and are delicious with a cup of tea or coffee.
INGREDIENTS
– 3.9 oz melted butter
– 7 oz sugar
– 1/2 teaspoon vanilla essence
– 1 egg
– 1 teaspoon lemon zest
– 1 tablespoon lemon juice
– 1/4 teaspoon salt
– 1/4 teaspoon baking powder
– 1/4 teaspoon baking soda
– 7 oz flour
– 2 oz powdered sugar
DIRECTIONS
Preheat oven to 350 degrees F.
Add the melted butter in a bowl for mixer. Add the sugar and mix well until you get a smooth paste, and the sugar melts. Add the vanilla, egg and lemon zest and juice.
Separately, mix flour with salt, baking powder and baking soda. Gradually incorporate the flour into the composition for cookies.
With a spoon take a little of composition and form with by hand balls of equal sizes.
Press with the heel the cookies, to give them a round shape. Put them on a tray lined with baking paper and bake them for 10 minutes. Remove the pan, turn the cookies and bake them for 3 minutes.
Remove the cookies from oven and powder them with sugar. Let them cool before serving.
