Take full advantage of cherry season and prepare original and very tasty recipes. Here is a simple recipe for fluffy cake with sour cherries, that the whole family will love.
INGREDIENTS
– 8 eggs
– 10 oz sugar
– 8 heaped tablespoons flour
– 4 tablespoons oil
– 2 sachets baking powder (preferably with saffron)
– 1 vial vanilla essence
– a pinch of salt
– zest from one orange
– a tablespoon of orange juice
– 17 oz sour cherries
DIRECTIONS
Wash the cherries and remove their pits. Then leave them to drain in a sieve.
Beat the egg whites stiff, with a pinch of salt. Then gradually incorporate the sugar continuing to mix until it melts. Then add the egg yolks, one at a time.
Then gradually incorporate the flour, and finally the oil.
Finally add the baking powder, vanilla extract and orange zest. After all is well incorporated, add a tablespoon of orange juice and mix gently with a spatula.
Pour the composition into a pan. Add a little flour on a plate. Before putting the sour cherries over the cake, roll them in flour with the cut side. Put the sour cherries above the dough with the powdered side down.
Bake the cake in the preheated oven at 350 ° F for 30-40 minutes or until golden brown on the surface and is well cooked in the interior.
Before eating the cake let it cool very well at room temperature. Cut it into cubes or diamonds and sprinkle it with powdered sugar on the surface.
