The cheesecake with avocado and nut crust is a delicious dessert that combines in perfect harmony two very different textures: creamy and crispy.
INGREDIENTS
– 3/4 cup walnuts
– 1 cup graham crackers
– 1 tablespoon sugar
– 1/2 teaspoon anise seeds
– 1/4 teaspoon salt
– 1 sachet of alimentary gelatin
– 1 lemon
– 1, 1/2 cup skim milk
– 1/2 cup sugar
– 1 teaspoon vanilla essence
– 2 avocados
– 4.5 oz low-fat cream cheese
DIRECTIONS
Grind the nuts and crackers together and mix them with a tablespoon of sugar, with the anise seeds and salt. Add two tablespoons of water and stretch the dough obtained on the bottom of a tray. Bake for 20 minutes at 350 degrees F and then allow it to cool completely.
Mix the gelatin with 2 tablespoons of water. Mix in a saucepan the milk, 1/2 cup sugar, vanilla essence and a little lemon zest. Boil the mixture and add the gelatin in it. Strain the mixture and give up the lemon zest.
Mix in a blender the avocados with cream cheese. Add the milk mixture in blender and mix the composition. Then place it over the dough and let the cheesecake cool for two hours.
The avocado cheesecake with walnut crust is served cold with a fresh lemonade or a delicious frappe.
