INGREDIENTS
– 35 oz duck breast
– 8.5 fl oz orange juice
– 8.8 oz butter
– 1.7 fl oz milk
– 4.4 oz honey
– 0.3 oz truffles cream
– 2 potatoes
– 5 oz broccoli
– 3 carrots, sliced
– salt
– pepper
– sweet paprika
– nutmeg
– oregano
DIRECTIONS
Score the duck breast on the part with skin and season it with salt and pepper. Fry it in the pan, 7-8 minutes per side. Then bake for about 10-15 minutes.
Meanwhile melt the butter in a pan, then add the orange juice, honey and milk. Mix constantly, until thickened. Season with salt to taste.
Boil the vegetables or steam them, but in separate vessels.
Season the potatoes with salt and pepper, butter and two tablespoons of milk. Add the truffle cream and mix well.
When carrots are al dente add them in a pan with hot butter. Sprinkle nutmeg and season with salt and pepper.
Over the broccoli add salt and butter, and season with oregano.
Remove the duck breast from the oven and cut it into slices. Drizzle it with the orange sauce and put it on a plate with the vegetables. Serve it with a glass of white wine.
