The cake with carrots and cheese topping is quick to prepare and will enchant you with its flavors. It is a cake that can be served with coffee in the morning and also as a snack between meals.
INGREDIENTS
– 3.5 oz brown sugar
– 2 eggs
– 2.5 fl oz oil
– 3.5 oz flour
– 2 oz raisins
– 1.7 oz flaked coconut
– 1 teaspoon cinnamon
– 1/4 teaspoon nutmeg
– 6.3 oz grated carrots
– 1/2 teaspoon baking powder
– a pinch of salt
For topping:
– 0.9 oz unsalted butter
– 1.7 oz mascarpone cheese
– 2.6 oz brown sugar
– 1 lime
– 0.9 oz chopped nuts (walnuts can be replaced with almonds or peanuts)
DIRECTIONS
Preheat oven to 350 degrees F. Coat with baking paper a square baking sheet, with 7 inch sides.
In a roomy bowl add the eggs and sugar. Mix everything until the sugar melts and eggs are foamy. Gradually add the oil, stirring constantly.
In another bowl mix flour with salt, baking powder, cinnamon and nutmeg. Gradually incorporate this mixture into egg mix, then add the carrots, raisins and coconut flakes.
Mix everything well, until you get a homogeneous composition.
Pour mixture obtained in the baking sheet and bake for 30 minutes. You can check if the cake is cooked using a toothpick. Insert a toothpick in the center of the cake. If it comes out clean, the cake is baked. Remove the cake from the tray and let it cool.
Meanwhile prepare the topping: mix the butter with mascarpone cheese and sugar, until the sugar melts and you get a creamy composition. Add the lime zest and chopped walnuts.
After it is cool, put the cake on a plate and add the topping over. You can decorate it with coconut or half nuts or almond flakes. Serve the cake with a cup of coffee or hot chocolate.
