Baked salmon with grapefruit, a perfect recipe for New Year’s Eve meal

It is said that on New Year’s Eve, it is good to eat fish if you want to be successful in the coming year. So it should not miss on your table. And as on New Year’s Eve you will certainly want to make an impression with your culinary preparations, we recommend a recipe of salmon with grapefruit.

Baked salmon with grapefruit

Ingredients

– a whole salmon (note that it must not be very large, to fit in the pan)
– 3 leeks
– 4 cloves garlic, chopped
– 1 grapefruit, medium, sliced 0,40 inch thick
– 5 sprigs of fresh thyme
– a glass of white wine
– a glass of water
– 2-3 tablespoons olive oil
– salt
– pepper

Directions

Preheat oven to 350 degrees F.

Clean the leeks and cut it lengthwise, then cut slices of about 0.60 inch, so that you get small crescents.

Make sure the fish is thoroughly washed and scaled. Season it with salt and pepper to taste.

In a small bowl add garlic and leeks and mix them well. Fill salmon with this mixture. Then add the slices of grapefruit and thyme. If the salmon is not large enough to fit a whole grapefruit slice, then add half slices.

Tie the fish and score it from place to place with a knife.

If it remains filling, add it in the pan, near the salmon. Add the slices of grapefruit and pour the water and white wine into pan. Drizzle the fish with a little olive oil. Bake in the heated oven for 50-60 minutes.

Serve the baked salmon with grapefruit with a side dish of boiled potatoes or steamed vegetables.
